Baby Corn Manchurian - one of the most loved Indo-Chinese dishes. For the Baby Corn Fritters:

  1. 200g baby corn, cleaned and sliced
  2. 1/2 cup all-purpose flour
  3. 1/4 cup corn flour
  4. 1 teaspoon ginger-garlic paste
  5. 1/2 teaspoon red chilli powder
  6. ½ teaspoon pepper powder
  7. Salt to taste
  8. Oil for deep frying

For the Manchurian Sauce:

  1. 1 tablespoon finely chopped garlic
  2. 1 tablespoon finely chopped ginger
  3. 1/2 cup finely chopped onions
  4. 1/2 cup finely chopped bell peppers 
  5. 2 tablespoons of soy sauce
  6. 1 tablespoon of tomato ketchup
  7. 1 tablespoon chilli sauce
  8. 1 tablespoon vinegar or lemon juice
  9. 1 teaspoon sugar ( to balance the tankiness)
  10. Salt to taste
  11. 1 tablespoon corn flour mixed with 2 tablespoons water (for thickening)
  12. Chopped spring onions  for garnishing

Instructions:

Step 1: Prepare the Baby Corn Fritters:

  1. In a bowl, mix all-purpose flour, corn flour, ginger-garlic paste, red chilli powder, and salt.
  2. Gradually add water to make a thick batter.
  3. Dip each baby corn slice into the batter, coating it evenly.
  4. Heat oil in a pan for deep frying. Fry the coated baby corn slices until golden brown and crispy. 

Step 2 : Make the Manchurian Sauce:

  1. In a pan, heat 1 tablespoon of oil.
  2. Add chopped garlic and ginger, sauté until aromatic.
  3. Add chopped onions and bell peppers, cook until they become translucent.
  4. Stir in soy sauce, tomato ketchup, chilli sauce, vinegar, sugar, black pepper, and salt. Mix well.
  5. Add the corn flour-water mixture to the sauce, stirring continuously until it thickens.
  6. Add the fried baby corn to the Manchurian sauce and toss until the baby corn is well-coated with the sauce.

Serve:

  1. Garnish with chopped spring onions.
  2. Serve the crispy and delicious Baby Corn Manchurian hot as an appetiser or with steamed rice or noodles.
