Desi Pasta Recipe - Just Like Your Mother Cooks

Do you remember when you used to take super-tasty pasta at school? That wasn’t like the usual pasta you get from the restaurant or any cafe, but it still tastes so good that you couldn’t get enough of it. Although no one can have the taste of motherly love in any recipe, we still cook that memorable desi recipe. 

You know from your own experience that having pasta is one of the best things your child can have for school. So, if you are a mother, this will be a time-saving recipe for you. Even if you are having a get-together at home or want to find an escape from the usual lunch pulao and all, you can go for desi pasta. 

Now, without any further ado, 

Let’s make the pasta just like your mom made it in those memorable school days. Follow the recipe, and you can have that ready in no time. 

Ingredients

  • 1 cup pasta 
  • 2 tablespoon oil 
  • 1 onion chopped
  • 2 tomatoes chopped
  • 4 garlic cloves chopped 
  • Veggies of your choice (here we have broccoli, mushroom, and capsicum)
  • 1 teaspoon Red chili powder 
  • ½ teaspoon turmeric
  • 1 teaspoon of coriander powder
  • Salt to taste
  • Maggie masala (optional)

Process of making desi pasta

  • For cooking pasta well, all you need is a pan and add about 5 cups of water to it. Let it boil, add salt, and then pasta. 
  • You can cook the pasta al-Dante as Italians do, or you can overcook it just like Indian style. But, remember, don’t overcook it too much that it becomes all mushy. 
  • Drain out the excess water, and your pasta is red to add to the sauce. 

  • For the sauce, take a pan and add about two tablespoons of oil. 

  • As the oil heats up, add your finely or even roughly chopped onions in there. Mix it well and let the onion turn translucent. 

  • When you see the onion turning a little brownish, add the chopped garlic to it. Mix well and cook it for about half a minute. 
  • Next goes in finely chopped tomatoes. Mix it well and let it cook nicely. 
  • The sauce starts to lose moisture and leaves oil on the sides. Add about half a cup of water. 

  • Put some salt to taste, red chili powder, and maggie masala, if you want to. Remember, while adding the salt, pasta also adds salt, so it should be enough just for the sauce. 
  • Mix everything well, and cover the lid. 

  • About 3 minutes later, add in your roughly chopped vegetables like mushrooms, corns, capsicum, etc. 
  • Again, cover the pan with a lid and let it cook for about 2 minutes. 
  • If you find that the sauce is turning too dry, add some water as well but not too much. 

  • Now, add in your pasta and mix everything gently. Overwise, the pasta will break. 
  • Cover the lid and cook for about 1 minute and not more. 

Your desi-style pasta is ready. If you want, instead of adding maggie masala, you can add Italian seasoning as well for a different taste. 

Serve hot with a cold beverage like a cold drink, and enjoy your home-alone time.

Things to note

Here are some things you can do to make your pasta better or even do some experiments to be more creative. 

  • If you don’t want to go for the usual desi masala in your desi pasta, you can have a package of maggie masala. Use it with red chili powder and salt, and you can have the desi pasta with minimal ingredients. 
  • If you don’t like the partially cooked pasta, this is the recipe in which you can cook your pasta as you like. If you want the overcooked one, that’s precisely like the Indians make it. 
  • This recipe is something that can be cooked in one pot. What I mean is as you prepare the tadka, you can add uncooked pasta to it. Add enough water to cook the pasta thoroughly. This is exactly how you cook pulao at home. So, you can cook in the cooker or even a cooking pot.
