Navratri Special Fasting Recipe: Sabudana Khichdi

Navratri is finally here! It is all about wearing chaniya choli, grabbing those dandiya sticks in hand and playing a lot of garba and dandiya! Isn’t it? It also comes with a lot of devotion, pooja and fasting. And for everyone who thinks that fasting means bland food then they are at the right place! This Navratri Special recipe is going to be a such a treat for your taste buds that you will end up making this feast after Navratri also. So, without any delay, let’s make Sabudana Khichdi recipe for fasting. 

Ingredients:
1. 1 cup sabudana
2. Boiled chopped potatoes 
3. Peanuts (5 tablespoons)
4. Green chilies (1-2 nos)
5. Fresh coriander leaves
6. Cumin seeds
7. 1-2 tablespoons of oil/ghee
8. Curry leaves 
9. Salt per taste 

Steps to make sabudana khichdi
1. To make non-sticky sabudana khichdi, start by taking 1 cup of sabudana in a container.


2. Rinse these pearls under water a couple of times to remove excess starch from it. 


3. Once done, soak the pearls in water. Remember to not use a lot of water while soaking sabudana. 3/4 cup of water should be enough or keep it 1-1 1/2 inch above the pearls.


4. Keep the pearls soaked in water for at least 6-8 hours. Overnight is preferred to make them soft and mushy. Press a pearl in between your fingers to check if they are done.


5. Now take a pan, heat some ghee/oil in a pan, add cumin seeds, curry leaves and chopped ginger and green chilies. Once they splutter, add your chopped boiled potatoes.


6. Once done, add your soaked sabudana pearls. Saute it on high flame for 2-3 minutes until it turns translucent.


7. Garnish it with some coriander leaves and lemon juice and serve it hot
