Scrumptious Mango-Garlic Pickle Recipe!

Pickles! Yummmm…. Just a mention of them brings a smile on our faces. Remember those summer holidays we spent at our grandma’s place and trying to sneak out some yummy pickles from those out of bound ‘barnis’? Well, surely the best of memories are associated with it. The sheer versatility of this tasty delight is amazing. It’s perfect for eating with parathas in breakfast, rice or roti in lunch or even along with mathris at evening tea time. And what’s better than a tasty mango pickle? Well how about kairi-garlic pickle? A different yet delicious twist to the normal mango pickles, its full of healthy goodness combined with bursts of flavor. What’s more? It's super easy to make! So, let’s begin!
Preparation Time: 15 - 20 Minutes
Time it Takes to Get Ready: 2 Days
Ingredients:
Raw Mango- ½ kg
Garlic (peeled)- 100 Gms
Mustard Oil- 200 ml
Red Chili powder- 2 Tsp
Turmeric Powder- 2 ½ Tsp
Dana Methi (Kuti)- 1 Tsp
Nigella Seeds (Kalonji)- ½ Tsp
Fennel Seeds Powder (Saunf powder)- 1 Tsp
Hing powder- 2 pinch
Mustard Powder (Small mustard)- 1 Tsp
Salt- 1 Tsp
Black Salt- ½ Tsp
Recipe:
- Wash and cut the raw mangoes into small pieces.
- Peel the garlic and keep them aside.
- Now heat the oil in a pan on medium heat and once it is moderately warm, switch off the flame.
- Now add hing and kalonji and give it a stir. After that add in the remaining spices.
- Now add garlic cloves and mix well.
- Now add mango slices as well.
- Mix them well ensuring each piece is covered well with masala.
P.S.- If you prefer spicy pickles, you can add in 3 Tsp of Red chili powder instead of two.
TIP: Always ensure mangoes are completely dry before you start with making your pickle, else the pickle might get spoilt.
And your delicious pickle is ready. Wasn’t it super easy? Now all you need to do is wait for two days till those beautiful mango pieces and garlic cloves soak up the spices and then enjoy! In between you need to give it a stir two times a day so that the spices evenly coat the mangoes.
Enjoy the pickles with your favorite snacks, parathas or rice! You can keep this pickle easily for one year when bottled and covered well with oil.
