Ingredients

  • 1 cup pasta
  • 4 cloves of garlic chopped
  • Veggies of choice (like we used above)
  • 2 tablespoon butter
  • 2 tablespoon maida
  • 1 cup of milk 
  • Italian seasoning
  • Oregano
  • Chili flakes
  • ½ teaspoon black pepper powder
  • Processed cheese
  • Salt to taste

Procedure for white sauce pasta

  • In a pan, add the butter and keep the gas on low.

  • Add the butter melts, add garlic and an equal amount of maida to it. That is all-purpose flour. As you add that to the pan, use a spatula or whisker to mix the sauce well.

  • You must cook the flour and butter only until the raw smell of the flour is out. Make sure you don’t burn it. 

Adding milk in the pan

  • When the raw smell is out, take the milk and add that in small portions. For example, first, add about ¼th cup and mix it well. When the milk takes a paste-like structure, add another batch of 1/4th cup and mix well. 
  • Keep going until you add all the milk and it becomes sauce-like. 
  • The objective of adding milk in small portions is to avoid lumps in the sauce.

Adding seasoning to the white sauce for pasta

  • Now, add in the seasoning, salt, and black pepper powder. 
  • You can also add cheese of your choice. I would suggest you add processed cheese because it gives a great taste to your pasta. 
  • Mix well and your white sauce is ready.

  • In another pan, heat up about 2 tablespoons of butter or oil. As it turns hot, add some chopped garlic for the extra taste. 
  • Don’t let the garlic burn and for that, you can right away add roughly chopped veggies to the pan. 
  • Sprinkle some salt and black pepper and toss everything up. 
  • Add the white sauce you just prepared as your veggies are partially cooked.

Things to note. 

Here are some tips that will help you cook better and at your convenience. 

  • In case you don’t find any vegetables at your home or minimal veggies, it’s okay. In fact, making white sauce pasta without vegetables is still a great option. However, you need one thing for the authentic taste and that is garlic. 
  • If your sauce becomes too thick there is a trip you can use. Instead of using freshwater, go for the water in which the pasta was boiling. This will retain the taste of the pasta as well as maintain the consistency of the sauce. 
  • While cooking the sauce, make sure the butter and flour don’t burn. Keep the flame on low and make sure the mixture doesn’t turn brown. Once that gives you a pale yellow color, start adding the milk. 
  • If you are still confused about the quantity of ingredients to use for the sauce, here is a trick. Follow the 1:1:5 rule. This means you should have 2 spoons of butter, 2 spoons full of flour, and about 1 cup of milk. This will make your sauce-making process a lot easier. 
  • Don’t have maida or don’t want to use maida in your white sauce, you can have an alternative. Instead of maida, you can use wheat flour as well. Although, it will change the taste a little.
