Why Chicken Burgers?

Every time we go to a fast-food store or restaurant, we stand there confused about what to order - veg or non-veg. (Unless you are someone like me who always goes for the chicken one :P). It always seems like a tough job to get your chicken burger ready. However, not many know this but it's the easiest fast food you can ever cook with your own hands. 

Even kitchen experts of the world believe that chicken burgers are A LOT easier than the veg burger or even aloo Tikki burger you get at your favorite fast food outlet. There is no need to pre-cook anything, no freezing or ingredients, and no tough chopping. Just a few convenient ingredients and you have your burger ready in just 15 minutes. Besides, this is the reason why you can get this ready in no time for your next house party. 

Hard to believe? Not anymore. This recipe is quite a simplified version of what a kitchen chef often serves on your table. So, get ready to cook something so delicious with minimal effort required. Follow the recipe. 

Serving - 5 people

Time took - 15 minutes (45 minutes for marination)

Cooking level - beginner to intermediate

  • Ingredients:

  • 750 gms minced chicken
  • 1 medium carrot
  • 1-inch ginger
  • 1 teaspoon black pepper
  • 1 teaspoon Italian mix (or oregano)
  • 1 teaspoon chili flakes
  • A handful of chopped fresh coriander
  • 1 teaspoon red chili powder (for extra kick)
  • 4 chopped green chili
  • 2 tablespoon breadcrumbs (extra for coating)
  • 2 tablespoon mayonnaise 
  • Salt to taste
  • Cheese slices
  • 4 medium-size onion
  • Cucumber
  • Tomatoes
  • 1 spoon Tomato ketchup
  • Hotsauce (optional)
  • Burger buns
  • Butter (or refined oil) 

Sautee veggies

Let’s prepare the veggies that would go in your burger patty. Read on to start with. 

  • Finely chop all your carrots, ginger, and green chili. 
  • Now, in a pan, take about 1 tablespoon of oil and let it heat up. 
  • As the oil turns hot, slide all chopped vegetables into it from your chopping board. 

  • Mix everything nicely and add a pinch of salt and pepper. 
  • You need to soft the carrot chunks but don’t want to burn other ingredients. So, for that, spray some water, just a little bit like ½ tablespoon. Cover the lid and let it cook.
  • You must cook this for no longer than 2 minutes on low to medium flame. 
  • Once you get that rawness out, it's all done. 

Make the burger patty mix

Here comes the real stuff, making the mixture for your burger patty. It's not that difficult, all you need is to take a bunch of ingredients and mix them. Start the process. 

  • In a big bowl, take the minced chicken and add 1 tablespoon of mayonnaise. Mix it thoroughly. The emulsified fat in mayonnaise will add amazing flavor to your chicken. 
  • As you mix it, the mix will become slightly lighter in shade. 
  • Now, add salt to taste, black pepper, sauteed veggies, dry oregano (or Italian mix), chili flakes, and mix everything nicely. 
  • Thereafter, to make the patty easy to handle and add some binding agent to it, you can add 1 tablespoon breadcrumbs into it. Again mix, mix, and mix.

There you have your burger patty ready to go to the pan. But, leave this mix for about 15 minutes to allow all the flavors to blend. After 15 minutes, it's all ready to use. 

The garnishing 

  • For garnishing, you need to slice all the vegetables like cucumber, tomatoes, and onion. 
  • Let’s make something exciting with onions. So, in a pan, take some oil and toss sliced onion into it. 

  • Add a pinch of salt, pepper, and a teaspoon of honey into it, 
  • Allow it to cook nicely until you get the caramelized onion. Turn off the heat, take it out of the pan and it's ready to use. 

  • Now, let’s make the burger spread, which is too easy. All you need is to take a tablespoon of mayonnaise and 1 spoon of tomato sauce and mix both together. There you have the spread. 

Cook the patties

 It's time for real fun. Let’s cook the patty and make a burger. 

  • In one bowl, take some water because we need that to handle the patty. And in one plate, take some breadcrumbs to coat the patty for extra crisp. 
  • Wet your hands from the water in the bowl, take some patty mix and roughly roll it in a sphere. Using your hands, flatten the patty and give it a nice patty shape. 
  • Prepare such balls or patties. In the mix we are using here, you can easily take out about 8 to 10 patties easily. So, divide before cooking it right away. 

  • Now, in a pan, add about 4 tablespoons of oil or butter if you like. Preferably, use a non-stick pan for better cooking. 
  • Once the oil heats up, place your first patty and even the second one if it fits. Enjoy the sizzling sound and let it cook from one side. 

  • We often think chicken takes time to cook but when you have minced chicken, it's pretty fast. So, after about 5 minutes, flip the patty and let it cook for another 2-3 minutes on medium flame. 
  • Now you may have the golden exterior. Place a cheese slice on top of the patty, cover the lid and let it cook until the cheese melts. Just like you notice in your favorite food truck shows. 

  • If you want, you can also add some extra cheese between the patty and cover it from all sides using a patty mix. Then cook it finely the way we just did, 
  • One thing to note here, if you find your patty is a bit soft and seems undone from the middle part, let it stay like this because overcooked patty doesn’t taste that good, and anyway, the steam will complete the process of cooking. 

There you have your patty ready to go in the burger and all good to eat. 

Assemble the burgers. 

  • On the other side, cut your buns in half and butter them up nicely from both sides. Use tava to crisp the buns from both sides. 

  • Now, on one side, spread the mayonnaise mix we just prepared. On the other side of the burger, spread some hot sauce or any other chili sauce you would like for the extra spice. 
  • On top of one side, it goes cheese patty. Top it with veggies, caramelized onion, and cover the burger with the bun. 

There you have your burger ready in no time. Serve your guests this home burger and surprise them with your not-so-tough chef skills. 

Points to note:

  • Why are we adding mayonnaise in the patty mix? This is to allow the minced chicken to become tender, soft, and partially cooked. When you leave the mix with mayo for quite some time, the vinegar and fat in it will go through some chemical reactions that will indeed make your chicken burger patty juice more delicious. 
  • The chicken burger is a healthy food itself if you cook it at your home. For mothers, especially, this recipe is a golden one because whatever vegetable your kid avoids having, you can chop it, cook it until it becomes tender, and add that to your chicken patty mix. This is the trick many Indian mothers follow while making Pav Bhaji but a burger is also one thing they can experiment with. 
  • As we have added breadcrumbs into this chicken patty, you can also go with 1 egg which also works as a binding agent for your patty. However, when you add egg, it becomes hard to handle but gives an unforgettable taste to your burger. So, if you are fine with the sticky mix of patties, do the recipe with an egg instead.
