Ingredients to make homemade ghee (surprisingly, it only takes two things to make ghee):

  1. Malai/cream (collected over 7-10 days)
  2. Water

How to prepare ghee at home:

  • If you are planning to make ghee at home, start collecting malai/fresh cream from milk for about 7-10 days.
  • Store the malai in the refrigerator to prevent spoilage.
  • Now the first step in this recipe is to churn the collected cream. You can do this step either using either a hand churner (mathani) or a mixer.
  • We used a mixer blender to churn it, but the choice is completely yours.

  • Add malai to a blender jar and blend it for a minute before adding any water to it.
  • Adding water will help in separating the butter from the liquid easily.
  • Keep blending until the mixture starts to curdle. Once the liquid is separated, you can use it as buttermilk or chhaach.

  • Separate the butter from the buttermilk using your hands or a muslin cloth and; squeeze out any excess liquid.
  • Now add the butter to a pan and start cooking on low flame.
  • Keep the flame as low as possible throughout the cooking process to avoid burning.

  • Let the butter melt properly and; keep stirring.
  • After a few minutes of cooking, the butter should start clearing up and; solids will form.
  • Keep stirring well.
  • After 15 minutes of cooking, the butter will start to change its colour to golden yellow.

  • Turn off the heat and let it cool for a few minutes.
  • Now strain the liquid from the solid parts.
  • There you have your tasty and super healthy ghee ready at home in no time.
