Ingredients:

For masala

  1. 3 medium-sized onions, finely chopped
  2. 2 medium-sized tomatoes, finely chopped

  5. 1/4 cup coriander leaves, finely chopped
  6. 1 teaspoon turmeric powder
  7. 1 tablespoon red chilli powder
  8. 1 tablespoon pav bhaji masala
  9. Salt to taste
  10. 4 tablespoons butter

For the Pav:

  1. 4 pav buns
  2. Butter for toasting

Prepare the Masala:

Step 1:

  1. In a large pan, melt 2 tablespoons of butter over medium heat.
  2. Add the finely chopped onions and sauté until they turn golden brown.
  3. Add the ginger-garlic paste and cook for 1-2 minutes until the raw aroma disappears.
  4. Add the finely chopped tomatoes and capsicum. Cook until the vegetables are soft and the tomatoes are mushy.

  1. Now, add turmeric powder, red chilli powder, pav bhaji masala, and salt. Mix well and let the masala cook for 5-7 minutes, stirring occasionally.
  2. Finish by adding chopped coriander leaves and the remaining 2 tablespoons of butter. Mix until well combined and set aside.

Prepare the Pav:

  1. Heat a griddle or a pan over medium heat. Add a little butter.
  2. Toast the pav on both sides until golden brown and crisp.
  3. Generously stuff the prepared masala into the toasted pav.
