  9. Salt to taste

Cooking Instruction:

Step 1 : Preparing the Tofu Tikka:

1. Begin by cutting the tofu into bite-sized cubes and placing them in a bowl.

2. In another bowl, mix together the yogurt, Kashmiri chilli powder, garam masala, coriander powder, cumin seed powder, ginger-garlic paste, lemon juice, and salt.

3. Pour the marinade over the tofu cubes, ensuring they are well-coated. Let it marinate for at least 30 minutes, or ideally overnight, in the refrigerator for maximum flavour.

Step 2 : Cooking the Tofu Tikka:

1. In a grill pan, pour 2 tablespoons of oil and heat the pan over medium to high heat.

2. Place the marinated tofu in the pan and cook until all sides of the tofu achieve a golden brown colour.

3. Set it aside.

  1. 2 tablespoons of oil
  2. 1 large onion, finely chopped
  3. 2 medium-sized tomatoes, chopped
  4. 1 teaspoon of cumin seeds
  5. 1 tablespoon ginger-garlic paste
  6. 2 tablespoons Kashmiri chilli powder
  7. 1 tablespoon garam masala
  8. 1/2 teaspoon turmeric powder
  9. 1/2 teaspoon chilli powder (adjust according to your spice preference)
  10. 7 to 8 cashews
  11. Salt to taste
  12. 1 cup coconut milk or fresh cream
  13. Crushed Fenugreek seeds for garnish

Cooking Instructions:

Step 1: Preparing the Masala:

1. Heat the oil in a sizable pan on medium heat.

2. Add the cinnamon, cumin seeds, chopped onion, ginger-garlic paste, and sauté until soft and translucent, about 5-7 minutes.

3. Add the chopped tomatoes and tomato paste, and cook until the tomatoes break down and become mushy, about 5 to 7 minutes. Then add cashews.

4. Once cooled down, blend into a paste using a mixer grinder.

6. Now add the Kashmiri chilli powder, garam masala, turmeric powder, chili powder, and salt. Mix well and cook for another 2 -3 minutes.

Step 2 : Bringing it all together:

1. Pour in the coconut milk and stir until well combined or add fresh cream.

2. Add the grilled tofu tikka cubes to the sauce and gently mix until they are coated with the masala sauce.

3. Let the curry simmer for another 5-10 minutes, allowing the flavours to meld together and the sauce to thicken to your desired consistency.

4. Once done, garnish with crushed fenugreek seeds.
